1. MAKE YOUR OWN PATTIES
Although the pre-made patties may be tempting when you walk by them at the grocery store, good quality and high-fat content ground beef make a world of difference. The best-grilled burger comes from a lean-to-fat ratio of 70-to-30. Season well with salt and pepper, but make sure not to overdo the salt because this tends to give the meat a rubbery texture.
2. MAKE YOUR PATTIES THICK
A thicker burger means a juicier burger. This happens because the juiciness comes from the slightly undercooked, medium-rare meat. When it is thicker, it holds more juice, so make sure not to press your patties down with a spatula! This will cause them to lose all that delicious moisture.

3. KEEP YOUR PATTIES VERY COLD BEFORE GOING ON THE GRILL
This will allow you to get a great crust development while maintaining a nice medium-rare inside.
4. PICK THE RIGHT BUN
You are going to want a bun with full-bodied flavor and texture. It shouldn’t be too soft or too firm – you have to find that happy medium. We recommend a sourdough or potato bun. If you want to grill your buns, feel free to add some butter to get crispy, succulent edges. Also – make sure to avoid burning them.
