1. Set up 2 grill zones — one for direct heat, and the other for indirect heat. Use the direct heat to sear meats and veggies, and move them to the cool side to allow the food to finish grilling without overcooking.

2. Leave the lid off for ingredients that cook quickly like shrimp and vegetables and put the lid on for longer-grilling items like poultry and steak.

3. Season burger meat liberally with salt, pepper and canola oil. Allow cheeses to melt completely by closing the lid for a delicious melted cheesy goodness.

4. If you don’t have time to marinate your meats, a dry rub is a quick way to add flavor to grilling. Keep a well stocked spice rack for the kitchen and the grill! Double points!

5. Keep vegetables whole or in larger sections so they’re easier to manage on the grill and keeps them from falling through the grates. For smaller items, use water-soaked wooden skewers it makes transferring and flipping easier and quicker.

In recent years, more and more people are becoming aware of the Eco-Friendly Movement. When it comes to grilling, we can choose to grill a little greener to reduce and limit the permanent damage being done to Mother Earth. Between choosing products that reduce the use of natural resources, to being a little smarter when cleaning our grills, it’s really up to us to make a difference.

Use Nontoxic Cleaners
It’s best to clean your grill with a heavy-duty grill brush and some elbow grease, but if you’re going to use a spray-on cleaner, go for one that’s nontoxic.

Buy Sustainable Charcoal
If you’re buying lump charcoal, look for brands like Wicked Good, Nature’s Own Chunk Charwood, and the Original Charcoal Company, which are made from sustainably harvested wood. Lazzari also produces a 100 percent mesquite lump charcoal made from prunings, dead and fallen wood, and selectively harvested wood.

Put Down the Lighter Fluid!
There’s no need to use toxic lighter fluid to ignite charcoal when you can use a chimney starter. They’re simple: Stuff some old newspaper in the bottom, fill the top with charcoal, and light the paper. At around $10 to $15, they’re also cheap. Grilling in the Springtime

Spring… the snow is melting, the birds are chirping, and the grill is heating. A helpful hint to remember is that although vegetables cook fairly quickly, they all vary in cooking times. Some take about a minute or two while denser vegetables, like potatoes, will take longer.

Grilling in Winter

El Nino has complicated things a little bit for us barbecue lovers. Heavy rainfall, heavy snowfall, freezing temperatures and a little wind can be troubling when trying to enjoy a barbecue cookout that is OUTSIDE. Here are some dos and don’ts for how to get started with hosting your own outdoor party this winter:

Do keep it simple.

For winter cooking outdoors, Rose suggests meals that lend themselves to slow cooking, like barbecue. “The longer, the slower, the better,” he says. Whether you’re using your grill, an outdoor oven or an open fire, he suggests dishes like roasted pork butt or brisket and adding wood chips to enhance flavour. “If you start early in the morning, then there’s little work to do when guests arrive,” Rose says. Add simple vegetable sides like roasted potatoes, mushrooms and cauliflower – ideally also cooked over the fire – and you’ve got an impressive and satisfying meal.

Don’t complicate beverages.

Dark spirits are made for winter drinking by the fire, both inside and out. Just one bottle of highquality whisky and a few glasses are all you need. It’s warmth in a bottle – and it’s also one of the easiest ways to serve drinks. Ron Swanson would approve.

Grilling Thanksgiving Day Turkey

OUTDOOR CHARCOAL GRILLING

Charcoal grilling can give you an amazing flavor when you use the right technique. For tasty results use these instructions:

  • Prepare charcoal-covered grill by removing cooking grate and opening all vents.
  • Position drip pan in center of charcoal grate and place 25 to 30 briquettes along each side (lengthwise) of drip pan. Burn briquettes until covered with gray ash, about 30 minutes. Place cooking grate in grill over coals.
  • Prepare fresh or thawed turkey by removing giblets and neck, draining juices and patting dry with clean paper towels.
  • Turn wings back to hold neck skin in place and tuck legs. Brush or spray entire turkey with cooking or vegetable oil.
  • Place turkey, breast up, on cooking grate over drip pan. Cover grill, leaving vents open.
  • Add 6 to 8 briquettes to each side every 45 to 60 minutes.
  • Using meat thermometer, cook turkey to internal temperature of 180° F in thigh and 170° F in breast.
  • 10 to 16 lb. turkeys will take 2 to 3 hours to grill. When done, remove and let stand for 15 minutes before carving.

The convenience of installing a grill in the backyard is something that you can benefit year-round. This grill installation was curated by Mr. Tony Hermanutz, from www.IronTreeSculptures.com, at his Washington mountain side home. Hermanutz, whose artistic element is usually in metal sculptures, decided to take this unique idea and give it a go.

The result? Breathtaking.

Cal Flame: Were there any problems you were faced with during the installation? How did you overcome them?

Hermanutz: I had to make sure the railing was strong enough for the Cal Flame grill. The railing was mad out of 3/8 wall rectangular tubing and channel iron. I wanted the rain cover to have a low profile but also be strong enough to handle the winds we get up on this Mountain. Not to mention it would be 1,000 foot drop if something went wrong, it took 4 of us to get the grill in place. The rain cover has a pivot so it be let down and cleaned when needed. The custom enclosure is made out of 304 stainless buffed and clear coated. The conversion to Natural Gas was easy. I had Industrial Supply make up a custom ½ inch natural gas hose, not sure if it made a difference but this BBQ heats up faster than I expected from Natural Gas.

Cal Flame: With you artistic eye, what advice would you give a customer looking to implement a barbecue into their backyard? Where would be the best place in a backyard to install a barbecue?

Hermanutz: On the cool/artistic side this BBQ speaks for itself, 304 stainless construction and for me the Cast Stainless burners. Since you should not have to worry about changing out your BBQ every 2 to 4 years because the burners burn out it makes sense to install this in a custom spot. The location can vary depending on the customer needs. But in most cases it should be close to the food prep area, kitchen or if you have the room/money go mac daddy with everything in one location. If you can do that then it can be located anywhere you like. For me the driving force for my design  was my view  from my deck. I wanted the lowest profile possible.
