St. Patrick’s Day Cook Out!

Corned Beef Hash: Prepare the grill for indirect cooking over medium heat (350° to 450°F). Arrange the celery, carrot, onion, and garlic in a 9-by-13-inch heavy-duty foil pan. Place the corned beef on top of the vegetables. Sprinkle the contents of the spice packet over the corned beef and rub into the surface of the meat.

Shamrock Salad: Remove woody ends from asparagus and cut into equal lengths. Cook peas and asparagus in boiling salted water for around 2 minutes or until just tender but still crisp. Drain, pat dry and place into a bowl with rocket, spinach and celery. Combine a olive oil and vinegar dressing, add salt and pepper to taste and mix well through. Pour over salad, and toss.
